Conclusion

High Rate Ultrafiltrationof full-fat soymilk can be achieved using a 500 000 molecular weight cut-off hollow fibre membrane, requiring only 15% of the conventional membrane area. The high rate product obtained was higher in concentration and of comparable quality to that of the conventional one. Further experiments using a pilot size ultrafiltrationunit acccpnuodating a membrane of 500 000 molecular weight cut-off to obtain comparable results are reconuaended.
