Conclusion
As the BSA-benzoin loading increases, the increase in retention is not very sharp. The effect of pH would be clearer when the enantioselectivity is studied by HPLC. Moreover apoform of the benzaldehyde lyase enzyme might give better results in terms of total benzoin retention since it is more specific than BSA in binding the benzoin molecule.
